H&L Custom Processing: A Legacy of Quality and Community in Coalgate

In the heart of Coalgate, H&L Custom Processing stands as a trusted name for farmers, hunters, and meat enthusiasts alike. Specializing in expert butchering and custom USDA processing for cattle, and pigs the business has been a vital part of the community since its founding in the fall of 2013. Whether you’re a farmer with livestock, a hunter with a fresh kill, or an individual looking to process meat for personal use, H&L Custom Processing offers high-quality, personalized service tailored to your exact specifications—saving you time and effort while delivering professional results.

A Partnership That Built a Foundation

H&L Custom Processing was established by Gary and Charity Hensley, alongside their partners Chad and Jodi Lackey. The two couples shared a vision of providing exceptional meat preparation services that catered to the unique needs of Coalgate’s residents. From the outset, their skilled team focused on precision and care, handling everything from basic cuts to specialized preparations with expertise and dedication.

The business quickly became known for its convenience and quality, offering a seamless experience for customers. Farmers could rely on H&L to process their deer efficiently, hunters appreciated the expert handling of their deer, and individuals valued the ability to customize their meat orders to perfection.

A Change in Ownership, A Lasting Tribute

The journey of H&L Custom Processing took a significant turn during the 2014-2015 deer season when Chad and Jodi Lackey decided to sell their ownership stake to Gary and Charity Hensley. This transition made the Hensleys the sole owners of the business, marking a new chapter in its history. However, the Lackeys’ contributions to the establishment of H&L Custom Processing were far from forgotten.

Grateful for the essential role Chad and Jodi played in building the business, Gary and Charity chose to retain the original name—H&L Custom Processing. The “H&L” moniker, initially representing the Hensleys and Lackeys, now serves as a lasting tribute to the partnership that laid the groundwork for its success. This decision reflects the Hensleys’ deep appreciation for their former partners and their commitment to honoring the legacy of collaboration.

~ In Memory ~

Gary’s mother, Pam, a cherished member of the H&L community, was a familiar and welcoming presence, especially during muzzleloader and rifle season. She dedicated her time to checking in deer at the front desk and personally notifying customers when their deer had been processed and was ready for pickup. Since H&L's opening, Pam selflessly prepared two Thanksgiving dinners each year, ensuring that those working and unable to be with their families could still enjoy a holiday meal. Known for her warmth and kindness, she greeted everyone with a smile and made a lasting impact on those around her. Pam passed away in May 2020 and will be deeply missed by everyone at H&L.

At a butcher's stall, various cuts of meat are displayed hanging on hooks. Two people are standing in front, likely making a purchase. The area is illuminated by a row of overhead lights. Prices are visible on some meat pieces, written in a local currency. The scene is in black and white, adding a timeless, documentary feel.
